Hi,
Can anyone tell me if I can run 2 Behringer UCA202 USB sound cards to provide 2 x L+R channels? Or could I do it through a 5.1 surround system?

I don't know anything about the UCA202 but in general you should be able to use two or more identical devices. If SCS finds two or more devices with the same name then SCS will append #1, #2, etc to the device names. But note that we cannot guarantee the devices will always be identified the same, so you may find your devices have been swapped. This isn't an SCS issue - it's further down in Windows - possibly related to the order in which they were connected, or the USB ports used. It's probably best to have both devices connected before booting up the machine, and to always use the same USB ports. But make sure you run a speaker test before going live.
The UCA202 documentation doesn't mention anything about the driver, so I assume it's DirectSound, which is OK.
Note that the outputs on the device are unbalanced, but that also applies to any domestic sound card. However, the UCA202 does also have optical output available if you can use it with your equipment.
