pause and resume

Is there a way to create a hot key for pause and resume I want to assign a key on my keyboard to function this.

Do you mean global Pause and Resume (as per the Pause/Resume button on the ribbon bar)? This can be activated by Alt/U.

That is what I was looking for, I guess my eyes are getting tired looking at computers. Is There a way to change the hotkey for that from Alt-U to something else.

Not currently. Alt/U is an implementation of the Windows standard for 'access keys', where an 'access key' is indicated by an underscored character and is actioned by pressing Alt and the access key. The letter 'U' is a convenient access key for Pause/Resume is the letter appears in both words so is relevant whichever word is displayed on the button.
