1. Audio output - Am I able to send specific audio cues to specific audio outputs? Im looking to do 3- Stereo outputs and 4 Mono outputs.

3. Is it possible to take a single audio cue and send it to multiple audio outputs at the same time?
4. Is it possible to take a live input (headset mic) and send it to audio outputs? (it doesnt need to be amazing quality, a live actor will be yelling)
5. Video outputs....... The documentation says it can do 4. Can it be 4 different videos at the same time to 4 different outputs?
6. Is it possible to increase the number of video outputs with the use of a triple head to go? or a Datapath 4x?
7. DMX control- Can I assign each cue a DMX trigger channel? Or does it control the entire "Cue stack"

2. I know there are SCS users who have this device so you should have no problems with it. Personally, I use a Roland Octa-Capture which I'm very happy with. Note that if you have a digital audio mixer then you may be able to connect directly to that via a USB connection. I have done this with a Behringer X32.

4. Yes, but for Live Inputs you will need to purchase the 'optional extra' of SoundMan-Server. See Production Properties - Live Inputs and Live Input Cues for more info.
5. Yes
6. It's not possible to increase the number of video outputs in SCS, but one of these devices may allow you to send a single video output to multiple outputs.
7. Yes. See Production Properties - Cue Control Devices - DMX. Unfortunately I've just noticed that the values displayed in the screenshot are different to those described against 'Play DMX Cue 0'. The screenshot should show 100 in this field and 149 in the next field.

I have a Focusrite Scarlett 18i20 (1st gen, three years old) in the theater and it works fine. But I tested all outputs to check if it works once only.
In productions I used only 4 channels, main stereo for music and two mono for effects.
I never used inputs, I have not sound man server.
I have a Scarlett 18i8 (1st gen too) at home for show design.
And I have an Enttec DMX USB Pro MK2 Interface for lighting control that works fine too.
