A project I worked on with Leviathan Workshop I did the custom LED control, plus token insertion and button pushing detection all automated and controlled by SCS which did the reel animations (the only human intervention was to select which video to play for the prize to be paid out, and then chuck the prize out the chute) :-
It used three Arduinos taking cues from and sending cues to SCS. I could have done it with one or two Arduinos but time was an issue and it was easier to distribute the tasks between three, besides they're dirt cheap in the scheme of things. Two of the Arduinos received serial cues from SCS to control the LED's and one both received serial cues plus sent keyboard cues for the buttons, button lighting, prize tray LED's and token insertion detection.
